Heather Highball
There’s no getting around it. Orkney’s a windy place. Some might call it bracing, others alarming. In any case, it means trees find it difficult to grow here. Instead, every summer, our moors glow with the beautiful pinks and purples of Orkneys native heather.
Ingredients
- 35ml Highland Park 14
- 5ml Heather Honey
- Pinch sea salt
- Top with Pink Grapefruit Soda
Method
- Add Highland Park to highball with honey and stir until mixed.
- Top highball glass with cubed ice.
- Garnish with grapefruit slice.
Gone-shopping
Orkney is a nation of 20 and a half inhabited islands. We say ‘and a half’ because when Noel Thomson goes to get his groceries, the island of Fara, where he lives year-round, becomes completely uninhabited. One of many ways in which Orkney’s community is unlike any other.
Ingredients
- 50ml Highland Park 16
- 15ml Bitter aperitif
- 15ml PX Sherry
- Dash Orange bitters
- Pinch sea salt
Method
- Add all ingredients to mixing glass and add cubed ice.
- Stir for 30 secs.
- Strain into chilled cocktail glass.
- Garnish with orange zest.

- Dash peach bitters
- 10ml Heather Honey
Method
- Add all ingredients to mixing glass and add cubed ice.
- Stir for 30 secs.
- Strain into chilled cocktail glass.
- Garnish with orange zest.
