Each bottle in our classic range offers a unique expression of Orkney character—combining the sweetness of sherry-seasoned oak casks with the subtle smoke of our local heathered peat.
Bloom-ling
There’s no getting around it. Orkney’s a windy place. Some might call it bracing, others alarming. In any case, it means trees find it difficult to grow here. Instead, every summer, our moors glow with the beautiful pinks and purples of Orkney's native heather.
Ingredients
- 35ml Highland Park 12
- 20ml Bitter Aperitivo
- 25ml pink grapefruit juice
- 5ml heather honey
- Pinch sea salt (optional)
Method
- Add Highland Park, Bitter Aperitivo, salt and honey to shaker
- Add cubed ice and shake for 10 seconds
- Strain into chilled cocktail glass
- Garnish with lemon zest
Fara-Way
Orkney is a nation of 20 and a half inhabited islands. We say ‘and a half’ because when Noel Thomson goes to get his groceries, the island of Fara, where he lives year-round, becomes completely uninhabited. One of many ways in which Orkney’s community is unlike any other.
Ingredients
- 35ml Highland Park 15
- 15ml pineapple syrup
- 50ml coconut water
- 10ml fresh lime
- Top soda water
- Mint sprig
Method
- Add Highland Park, pineapple syrup, coconut water and lime to a highball glass without ice and stir until mixed
- Fill glass with cubed ice and stir for 10 seconds
- Crown with sparkling soda and softly stir together
- Add a small sprig of mint to top and serve

Ingredients
- 40ml Highland Park 18
- 10ml Maraschino Liqueur
- 15ml White Vermouth
- Lemon peel
Method
- Add Highland Park, Maraschino liqueur, vermouth to mixing glass, add ice and stir for 20 seconds
- Fill rocks glass with cubed ice, or 1 large ice cube, and pour in cocktail
- Add lemon peel garnish
