Sherry Skies is a 19 year old single malt that proudly celebrates fruity, spicy and tannic flavours that sherry seasoned oak casks bring to Highland Park whisky. It’s crafted from just nine hand-selected casks.
Sherry Skies has been crafted by Gordon Motion as his “farewell dram” and is a particularly powerful expression of the sherry cask-influenced flavour that he has spent his career exploring and perfecting.

The flavour
Intensely fruity but wonderfully smooth. Toasted oak and fragrant vanilla on the nose, leading to sweet, caramelised fruit, spice and citrus peel on the palate. The finish is where the spicy notes of anise, cinnamon come to the fore, alongside a lingering hint of heathered peat smoke.
The craft
Sherry Skies is made from just nine casks hand-selected by Gordon Motion for their character and flavour. Of these, six are sherry-seasoned European oak quarter casks, which, thanks to their smaller size give a particularly potent sherry-seasoned flavour to the whiskies matured in them. American Oak bourbon casks tame the tannins and add an effortless balance and smoothness.
The stories
Though it’s a celebration of the sherry-seasoned oak casks that we source in Jerez, Spain, Sherry Skies is named after something a little closer to home: the beautiful, sherry-coloured sunsets that you’ll often see on an Orkney evening, thanks to our island home’s unique latitude and light.
