It’s no exaggeration to say that peat is the ‘terroir’ of island whiskies. Our ancient peat moor, HOBBISTER, lies only seven miles from our distillery and overlooks the historic bay of Scapa Flow.
In April, we hand cut our peat – made up of compacted layers of heather and plants, nearly 4m deep in places and some of it over 9,000 years old – and leave it to dry naturally over the long, bright summer months. When it burns in our ancient kiln fires, drying our malted barley, it imparts that intense floral peat smoke which makes Highland Park whiskies so distinctive. A limited edition of 1,200 bottles, HOBBISTER was the first of a series of five limited editions, showcasing our five keystones of production.
