Mix things up for World Cocktail Day by trying an Old Fashioned cocktail from our friends at The Cocktail Bible, each inspired by a different Highland Park Whisky.
Spiced Vanilla Old Fashioned
60ml Highland Park 10 Year Old
15ml homemade vanilla syrup (method below)
2 x dashes of aromatic bitters
Fresh orange oils
Orange and Maraschino cherry garnish
Add the whisky, aromatic bitters and homemade vanilla syrup to a rocks glass and top with cubed ice.
Stir for 30 seconds, then express the oils from an orange peel over the top of the glass.
Garnish with an orange peel and Maraschino cherries.
VANILLA SYRUP METHOD:
Add 1 cup of sugar to a bowl. Split 1 vanilla pod lengthwise and scrape out the vanilla seeds. Add the seeds and the rest of the vanilla post to the sugar, mix well and leave for 24 hours to infuse.
Add 1 cup of water to a small saucepan, bring to the boil and add the vanilla sugar. Stir until dissolved. Reduce heat and simmer for 5 minutes. Remove from the heat and cover. When cooled, the syrup is ready for mixing.
Honey and Cinnamon Old Fashioned
60ml Highland Park 12 Year Old
Dash of Orange Bitters
Dash of Cinnamon Bitters
Charred Orange Garnish
Stir all ingredients in a mixing glass and strain over fresh ice.
Garnish with a charred orange wedge.
Pineapple and Cinnamon Old Fashioned
60ml Highland Park 15 Year Old
15ml homemade spiced pineapple syrup (recipe below)
2 dashes cinnamon bitters
Charred pineapple garnish
Add Whisky, cinnamon bitters and homemade spiced pineapple syrup to a rocks glass and top with cubed ice. Stir for 30 seconds to chill. Char a pineapple wedge and garnish to give the serve a beautiful aroma.
INGREDIENTS (SPICED PINEAPPLE SYRUP):
1/2 a pineapple cubed
100g soft brown sugar
100g white sugar
1 cinnamon stick
1 cm piece ginger root
Add the pineapple, sugars, cinnamon and ginger to a medium saucepan with some butter and cook over a medium heat until the pineapple is caramelised. Add the water and bring to the boil, then reduce the heat and simmer for 20 minutes. Remove from the heat and cool then refrigerate overnight. Strain the mixture until you are left with the beautiful spiced pineapple syrup.
Smoked Cherry and Chocolate Old Fashioned
60ml Highland Park 18 Year Old
15ml Maraschino Cherry Syrup
2 x Dashes of Chocolate Bitters
Cherry Woodchips Smoke
Add the Whisky, chocolate bitters and Maraschino cherry syrup to a rocks glass and top with cubed ice.
Stir for 30 seconds to chill the cocktail and garnish with a cherry.
Sit the cocktail under a glass cloche and using a smoker with cherry woodchips, add smoke to the cloche.
Let the smoke sit there for at least 1 minute (the longer under the cloche, the greater the smoke flavour).
