Adding egg white allows the flavours of this serve to be held on the palate for longer and also provides the perfect foil for the sharpness of the lemon and sweetness of the sugar syrup. The result is a rich and perfectly balanced cocktail in which TWISTED TATTOO 16 Year Old takes the lead and Rioja wine plays a beautifully considered supporting role.
INGREDIENTS (one serve)
50ml Highland Park TWISTED TATTOO 16 Year Old
20ml lemon juice
20ml sugar syrup
15ml egg white
20ml Rioja wine
1. Shake all the ingredients – except the wine – in a shaker filled with ice
2. Strain into a whisky glass filled with ice
3. Carefully float the Rioja wine on top
