Our Distillery

Steeped in our history, forging our future, our distillery in Kirkwall dates back to 1798. Here, we're boldly experimenting to support our whisky, community and environment for years to come.

The Kilns

The pagoda turrets rising above our distillery in Kirkwall aren’t just for show. We still use two traditional kilns to dry our hand-turned malted barley, maintaining the craft practice that we’ve perfected over more than 200 years. The youngest of our kilns, “The New Kiln”, is over 100 years old.

The Stills

Our still house has four stills, two wash stills and two spirit stills, and a robust copper and brass spirit safe. The stills, made by Forsyth's in Speyside, are medium sized, which means they produce a new make spirit with a balanced, rounded character perfect for cask aging.

The Warehouses

We still use the traditional, earth-floored dunnage warehouses next to our distillery to age much of our whisky. Recent research shows that, thanks to Orkney’s temperate climate, maturing here means there’s less whisky lost
to the angel’s share than on the mainland.
