MIXING UP THE MALT

 

To mark World Cocktail Day on 13th May and World Whisky Day on 16th May, we’ve a recipe for an Old Dog Shandy cocktail, courtesy of our friends at Orkney Craft Vinegar, which really mixes up the malt!

 

Just before Christmas, we introduced Highland Park Malt Vinegar, the latest in a range of traditionally produced artisan vinegars, created in small batches by Orkney Craft Vinegar owner Sam Britten. When Sam was setting up his business, he used one of our casks to trial a Highland Park vinegar. We were so impressed with the results that a new partnership was formed.

 

Sam uses only locally sourced and foraged ingredients to flavour his traditionally-fermented vinegars, which he then leaves to age in oak barrels for up to a year before bottling in small batches to deliver a genuine taste of Orkney. Highland Park Malt Vinegar is made using barley and a proportion of our own peated malt from the distillery. Traditionally fermented and then aged for up to a year in our whisky-soaked sherry oak casks, the vinegar delivers classic heather honey flavours. The extended ageing process allows the vinegar to fully absorb the flavours from our barrels and results in a softer and more rounded flavour with far more depth than a standard vinegar. Old Dog Shandy (Highland Park edition)

 

A traditional shandy beer is mixed with lemonade, usually in proportions of one to one. This is a different take on the drink using Highland Park Malt Vinegar, dark beer, smoked honey and Highland Park 12 Year Old VIKING HONOUR over crushed ice. The recipe makes one drink.

 

INGREDIENTS

 

60ml dark beer

20ml smoked honey

15ml Highland Park Malt Vinegar

15ml Highland Park 12 Year Old VIKING HONOUR

Crushed ice

 

METHOD

 

Combine the honey, vinegar, whisky and dark beer in a beer glass.

Fill with crushed ice and sip through a straw.

World Cocktail Day

 

Although the cocktail is a British invention, dating back to the 19th century, it was Connecticut-born bartender, Jerry Thomas, who captured the early spirit of mixology in his Bartender’s Guide – a veritable encyclopedia of drink and flavour combinations, published in 1862.
