When Dave Williams left the army, where he’d worked as a masterchef, little did he imagine that his dream of opening a chocolate shop would lead to the founding of Mirrie Dancers, the UK’s most northerly chocolate company. Dave’s latest creation is a heavenly combination of Highland Park whisky and luxury layered dark chocolate.
It all began when Dave created Shetland Seaweed Chocolate, to help promote a local gin, and realised there was a genuine appetite for luxury chocolates, lovingly handcrafted using the finest local ingredients. From this simple start he now has two shops, in Kirkwall and Lerwick, as well as a thriving online business. Dave’s company name is inspired by the Orkney and Shetland term for the Northern Lights – locally known as the ‘Merrie’ or ‘Mirrie’ Dancers – and reflects his passion for the islands. From two tiny kitchens – one in Orkney and one in Shetland – Dave and his team make extraordinary chocolate creations by hand, in small batches, using locally produced sea salt, honey, rhubarb infused gin and now Highland Park whisky.
Dave’s aim is to create classic flavour combinations with a unique island twist. With our shared passion for local produce, fine craftsmanship and intensely balanced flavours, the union between Highland Park and Mirrie Dancers really is a match made in heaven – and the proof is in the eating!
The Luxury Layered Dark Chocolate Bar, Handmade in Orkney with Highland Park 12 Year Old Single Malt Whisky retails for £10.00 while a box of Dark Chocolate Truffles, Handmade in Orkney with Highland Park 12 Year Old Single Malt Whisky retails for £13.25. You’ll find them in our Albert Street visitor experience store and our Distillery Shop; in Mirrie Dancers stores in Kirkwall, Orkney and Lerwick, Shetland; and in the Mirrie Dancers Online Shop.
Valentine’s Weekend Whisky and Chocolate Tasting Tour
To celebrate our new partnership, we’re inviting visitors to enjoy a tour of the distillery followed by a visit to our private tasting room for an exceptional tasting event, featuring six of our whiskies imaginatively paired with six chocolates from Mirrie Dancers. The tasting will be led by one of our Senior Visitor Experience Hosts and a member of the Mirrie Dancers team and the whiskies will include 12 Year Old VIKING HONOUR, 18 Year Old VIKING PRIDE, VALKYRIE, VALFATHER, FULL VOLUME and TWISTED TATTOO.
The Whisky and Chocolate Tasting Tour takes two hours and starts at at 12noon, 2.30pm and 6.00pm on both Friday 14th and Saturday 15th February.
